Dom Pérignon Champagne Magnum

Produced from Pinot Noir and Chardonnay grapes from the finest growths and vineyards, Dom is created only in years in which the harvest is precisely suitable. Fragile, timeless, and immeasurably enjoyable with aromas of almond, powdered cocoa, and dried flowers leading to a precise, chiseled palate. Toasty notes give a rounded finish and denote a fully realized maturity, while on the palate, the wine instantly traces an astoundingly fine line between density and weightlessness. A collaboration between Baron de Rothschild of France and Napa Valley's own Robert Mondavi, the Opus One is a California grown Bordeaux-style blend prized for its smooth decadence. Look for ripe berry flavors backed by tobacco, licorice, and smoke, then settle in for a long luxurious finish.

Penfolds Grange Bin 95 2010

Black to the core, purple on the rim. An intense nose. An immediate barrel-ferment propulsion sweet and candied, with a peaty, iodine, green olive base. Beneath this, a barely-concealed swirl of Vegemite, yeast extract, concentrated salt-paste - laced with paprika, oregano flower, and thyme. A slurry of cocoa powder, a scented waft of black pudding, and a splash of nori-roll, sea-spray temporarily balance this aromatic equation. The palate is dense, with a paste-like texture and weight. A balsamic liveliness, lift, and energy are unleashed. Tannins focus on the roof of the mouth, laden with an additional film of (85% cacao) dark chocolate, mocha. Silver Oak Napa Valley Cabernet Sauvignon Magnum

A complex and layered expression of California Cabernet, the wine has a dark garnet color and is bursting with fruit even as it is poured. It has a nose of cassis, violets, licorice, allspice, and roasting coffee. On the palate, it has an extraordinarily rich attack, a satin texture, and an exuberant expression of fruit on the mid-palate that comes from picking grapes at the peak of their ripeness. The wine finishes with notions of savory umami and fruit with a medium tannic grip.
